Probably a font is used that does not support non-ASCII characters. Use a TrueType font (like Arial Unicode) that does support them.

Yes. To create multiple output documents, make sure the Output document node is a child of the Data node. Also make sure that the filename of each document is unique using a unique value from your data source.
